RECIPE: Broiled Tilapia with Tomato and Basil

Once you discover how easy it is to cook fish in your oven’s broiler you’ll get hooked like I did. Not only it comes out perfectly, brown on the outside and very moist on the inside, but if you line your baking sheet with non stick foil there are no dishes to wash!

Ingredients: (serves 4)

4 (8 ounce) tilapia fillets

2 large tomatoes, diced

2 tablespoons of fresh basil thinly sliced

2 garlic cloves, minced

4 tablespoons of extra virgin olive oil

nonstick olive oil cooking spray

salt and pepper to taste

Preheat the broiler. Line a rimmed baking sheet with foil and coat it with the olive oil cooking spray. Season the tilapia fillets with salt and pepper to taste in both sides, align them in the sheet and drizzle them with two tablespoons of the olive oil. Since ovens vary, broil them for around ten minutes, or until the fish turns golden brown and flakes easily with a fork. In a bowl combine the tomatoes, basil, garlic, the remaining two tablespoons of olive oil and salt and pepper two taste. Pour the mix over the fish and serve immediately. Enjoy!

Tip: Broiling is a great low-fat cooking method. You can also try it with other types of fish or even vegetables.
