RECIPE: Watercress, Avocado and Almonds Salad With Sweet Balsamic Dressing

Ingredients: (serves 4)

1 bunch of watercress, trimmed and coarsely chopped

2 ripe hass avocados

1 cup of roasted unsalted almonds chopped

3 tablespoons of extra virgin olive oil

1 tablespoon of balsamic vinegar

1 tablespoon of honey

salt and pepper to taste

Arrange the watercress and the avocados diced in a bowl. To make the dressing combine the olive oil, the balsamic vinegar and the honey and whisk until combined. This dressing is very versatile, you can make it as sweet or tart as you like, the measurements are just a guideline, so just adjust it to your taste. To do this I suggest you to try it on a leaf of watercress first before adding it to your whole salad, once you are content with it just pour it over it. Finally just sprinkle it with the chopped almonds and add salt and pepper to your taste. Enjoy!

Tip: The easiest way to dice an avocado is just to cut it lengthwise, and then cut a “grid” type of pattern with your knife inside of it (be careful with your hands). When you are done just scoop the content out with a spoon.

This salad provides a great source of Omega 3 oils (from the avocados), fiber, protein (from the almonds) and viatmins A and C from the watercress. Without mentioning that is addictively good.
